My kids request them often for their after-school snack, and I am more than happy to make them. After all, it’s just cheese, heated in the microwave, then shaped into rolls that you can use to dip. It doesn’t get easier than that!
You can make them in the microwave
I found the original recipe on Linda’s Low Carb Recipes. I really liked the idea of cheese-only roll-ups. Most recipes I found included bread or tortillas.
But Linda makes her roll-ups in a skillet, and I wanted to make mine using the microwave. As it turns out, it’s totally doable! And they turn out wonderfully crunchy and cheesy.
But are they healthy?
Cheese is actually fine to eat. Current research says that cheese consumption is not significantly associated with risk of all-cause mortality. Even if you’re not on a keto diet, they are certainly a better choice than processed and highly refined commercial snacks.
How to store keto cheese roll-ups
I actually don’t recommend storing them at all. They lose their crispness pretty fast. Since I make them in the microwave, it’s very easy to make them fresh and serve them right away.

Another great low carb snack that I make often are these tasty low carb cheese crisps. They are made with shredded mozzarella, garlic and oregano, and taste like pizza! And these jalapeno cheese crisps are not just delicious, but also look great!
- 4 slices sharp cheddar
- 1/2 cup marinara sauce
- Place each cheddar slice on a parchment square slightly larger than the cheese slice.
- Microwave each slice for 1 minute.
- Allow to set for a few seconds, but start rolling it up before it completely hardens.
- Repeat with the remaining slices.
- Serve with marinara sauce or guacamole for dipping.
