I already told you about grandpa Yaakov’s amazing dried fruit compote, the one I don’t have the recipe for. Grandpa also used to make a strawberry compote, slow cooking strawberries and sugar over low heat. He used to serve his strawberry compote cold, and it was so, so good. I make a quick version and spoon it warm over cold, creamy Greek yogurt. Bliss!
Makes 2 servings

Ingredients
8oz (1/2 package) fresh strawberries
2 tablespoons sugar
1 teaspoon fresh lemon juice
1/2 teaspoon pure vanilla extract
1 cup plain low fat Greek yogurt
Directions
Place strawberries, sugar, lemon juice and vanilla in a small saucepan. Bring to a simmer over medium heat. Cook, stirring often, 10 minutes, until strawberries are very soft. Cool 10 minutes, then spoon the strawberries and the syrup over Greek yogurt. Serve immediately.
