Mashed Butternut Squash

Delightfully buttery and cheesy, yet still far healthier than mashed potatoes, mashed butternut squash is one of my favorite substitutes for the starchy, high-carb “real thing.” (Mashed cauliflower is another great substitute, by the way).

Yield: 4 servings
Ingredients
  • 1 lb. raw, cubed butternut squash
  • 2 tablespoons unsalted butter, soft
  • ¼ cup Parmesan cheese
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 teaspoon minced garlic
Instructions
  1. Place the butternut squash in a microwave-safe bowl. Add ½ cup water, cover and microwave for 15 minutes, until tender. Drain.
  2. Place the steamed butternut squash along with the remaining ingredients in your food processor. Process until smooth, 1-2 minutes, stopping to scrape the sides with a spatula as needed.
