Butter Garlic Shrimp

butter garlic shrimp

A wonderful preparation of shrimp that highlights their sweet, delicate flavor. Serving this dish with crusty bread is a must – the sauce is absolutely delightful. I love shrimp and always have 14oz packages of raw, frozen, peeled and deveined, tails on, large shrimp in the freezer. Just 5 minutes in a bowl of cold water and they defrost. My packages are from Safeway and the brand is “Waterfront Bistro,” but I’m sure every major chain has something similar.

Makes 3 servings

Total time: 12 minutes
Prep: 5 minutes
Cook: 7 minutes

2 tablespoons unsalted butter
1 tablespoon minced garlic
1/8 teaspoon cayenne pepper
1 teaspoon kosher salt
14oz large shrimp (21-25 count per pound), peeled and deveined
1 medium lemon, juiced and zested (1 tablespoon lemon juice, 1 teaspoon lemon zest)
1/4 cup fresh chopped Italian parsley
1/4 teaspoon freshly ground black pepper

1. Heat butter in a large skillet over medium-high heat, about 2 minutes. Add garlic, cayenne, salt and shrimp and cook, tossing occasionally, until shrimp are pink and opaque, about 5 minutes.

2. Remove from heat. Toss with the lemon juice, lemon zest, parsley and black pepper. Serve immediately, spooning the shrimp and sauce over cooked brown rice or serving with crusty whole-grain bread.
