Paleo Chocolate Pudding

This chocolate pudding is ridiculously easy to make, and the result is decadent and rich, with a velvety mouthfeel. Seriously, no one will believe this amazing chocolate pudding has just 2 ingredients.

Yield: 5 servings
  1. In a medium pot, heat the chocolate and coconut milk over medium heat, stirring until chocolate is melted.
  2. Turn heat off and whisk the mixture with a hand whisk until very smooth.
  3. Pour into five 4oz ramekins or dessert glasses, cover and refrigerate at least 2 hours before serving.
For an even richer chocolate experience, and if you don't mind using xylitol, here's another version for this chocolate pudding that I like even better:
3.5 oz super-dark chocolate such as Lindt 90%
1/4 cup xylitol
1 cup full-fat canned coconut milk
Follow the same instructions, adding the xylitol to the chocolate and coconut milk and heating it all together.
