Oven Steak Fries

Tasty oven steak fries with olive oil and cajun seasoning. Microwaving the potatoes first speeds up the process without giving up the oven crispiness.

Cajun Seasoning:

  • 1 teaspoon Diamond Crystal kosher salt
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 teaspoons paprika or smoked paprika
  • 1/8 teaspoon cayenne pepper use 1/4 teaspoon for more heat


  • 1 large Russet potato, about 15 oz, unpeeled
  • Olive oil spray or 1 TBS oil


  • Preheat your oven to 450 degrees F. In a small bowl, whisk together the Cajun seasoning ingredients.
  • Scrub the potato clean, then slice it into twelve thick wedges, as shown in the video.
  • Place the potato wedges on a microwave-safe plate and microwave them, uncovered, for 5 minutes.
  • On a cutting board, spray the potatoes with olive oil, then sprinkle them with the seasoning, coating them all over.
  • Transfer the potatoes to a rimmed parchment-lined baking sheet. Arrange them on the baking sheet in a single layer and give them another quick spray of oil.
  • Bake the potatoes for 8 minutes. Carefully turn each wedge to the other side, lightly spray again, and bake until fork-tender, about 8 more minutes.



It's best to oil the potato wedges and season them on a cutting board, before arranging them on the baking sheet. If you season them when they're already on the pan, some of the spices will get to the bottom of the pan and might burn while you bake the potatoes.
