It's actually not difficult to come up with healthy pumpkin recipes. Pumpkin is very healthy - you just need to avoid adding junk to it. Pumpkin is a good source of beta carotene, potassium, vitamin C and fiber.
I don't mind using canned pumpkin in my recipes, but I do make sure it's pure pumpkin puree and not the pre-sweetened pumpkin pie filling. I also try to find BPA-free cans.
Of course, if you prefer, you can make pureed pumpkin from scratch and then use it in many recipes. It's not difficult - just a bit time consuming, but if you're home anyway, why not bake a pumpkin? It will reward you with its wonderful scent.
