egg white omelet

I used to think that egg white omelets couldn’t possibly be as good as “real” omelets. I was wrong. This egg-white omelet is just as good as a regular omelet, and contains significantly less fat, cholesterol and calories, even though it is very filling. In my omelet I used scallions, cherry tomatoes and Parmesan, but you can obviously use whatever you like, including onions, mushrooms and bell peppers.

There are several schools of thought on how to make a perfect omelet. I like to incorporate the vegetables into the omelet rather than cook each separately, then stuff the cooked omelet with the filling. I also like to flip my omelet before folding it, to make sure it’s thoroughly cooked on both sides.

warm quinoa salad

This delicious warm quinoa salad makes a hearty, satisfying dish, in fact I often serve it as a main dish for three (the little one isn’t a fan of quinoa), accompanied by steamed broccoli. The lime-cumin dressing highlights the nutty flavor of the quinoa, and I love the crunch from the red onions and the chewiness of the beans and the corn. Truly a fabulous dish, and very easy to make, too. We enjoy it warm, and never have any leftovers, but if you do have leftovers, this quinoa salad should taste great cold, or at room temperature.

butter garlic shrimp

A wonderful preparation of shrimp that highlights their sweet, delicate flavor. Serving this dish with crusty bread is a must – the sauce is absolutely delightful. I love shrimp and always have 14oz packages of raw, frozen, peeled and deveined, tails on, large shrimp in the freezer. Just 5 minutes in a bowl of cold water and they defrost. My packages are from Safeway and the brand is “Waterfront Bistro,” but I’m sure every major chain has something similar.

Chili con carne – a hearty, flavorful dish that warms the belly and the heart. The perfect winter comfort food! This version is super quick – 30 minutes from start to finish, but the flavors are still strong and complex.

spicy chickpeas

Chickpeas are briefly sautéed in seasoned olive oil. An easy vegetarian (actually, vegan) main dish when served over brown rice with a side of veggie. If you don’t enjoy spicy food, omit the cayenne – this dish is delicious without any heat.
