Low Carb Grilled Cheese

This delicious grilled cheese sandwich is made with my super easy, super quick low carb microwave bread. And while admittedly it’s not exactly like real bread (it’s soft and a little eggy), the cheesy, buttery goodness of this warm sandwich definitely hits the spot!

Ingredients
  • 2 tablespoons salted butter, divided
  • 1 large egg
  • 1 tablespoon coconut flour
  • ¼ teaspoon baking powder
  • 1 slice (1 oz) sharp cheddar cheese
Instructions
  1. In a microwave-safe small bowl, add 1 tablespoon butter. Melt in the microwave on low.
  2. Allow the butter to slightly cool, then use a fork to mix in the egg, coconut flour and baking powder, until very smooth.
  3. Using a spatula, transfer the mixture to a small pyrex bowl (mine measures 2 inches on the bottom and 4 inches at the top).
  4. Microwave on high for 90 seconds. Bread will puff up while "baking," then deflate a little. When done, it will look like a spongy muffin.
  5. Gently, with a small knife, loosen the bread edges and remove from the bowl onto a plate. Slice crosswise into two slices. Place the cheese on one of the slices, and top with the other slice.
  6. In a small nonstick skillet, melt the remaining tablespoon of butter over medium heat. Add the sandwich. Cook until bread is golden brown and cheese is melted, 2-3 minutes per side, pressing on it with a spatula to flatten as it cooks.
