I love this delicious side dish because it’s so easy – just mix the ingredients in the pan and stick in the oven for 20 minutes. The combination of olive oil, sun dried tomatoes and Parmesan is exquisite.

  • 1 lb fresh green beans, trimmed
  • ½ cup sun-dried tomatoes, drained, halved
  • ¼ cup olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¼ cup grated Parmesan
  1. Preheat oven to 425 degrees F.
  2. Place all the ingredients in a 9 X 13 -inch baking dish. Use your clean hands to toss everything together.
  3. Bake until green beans are just tender, stirring once, about 20 minutes.
