Yield: 4 servings
Ingredients
  • 1 (2 lb.) beef tenderloin
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried rosemary
  • ¼ teaspoon dried thyme
Instructions
  1. Remove the tenderloin from the fridge an hour before you plan to start cooking.
  2. Preheat oven to 400 degrees F.
  3. Pat the beef dry with paper towels. If one end is thinner than the other, tuck it underneath and tie with butcher's twine to make sure it cooks evenly.
  4. Use clean hands to rub the beef with the oil, then sprinkle it with the seasonings, pressing to help them adhere.
  5. Heat a large, heavy bottomed, ovenproof skillet over medium-high heat, 3-4 minutes. Brown the beef on all sides, about 2 minutes on each side for a total of about 8 minutes.
  6. Turn the heat off. Transfer the skillet to the oven and roast until an instant-read thermometer inserted in the thickest part registers 130 degrees F (medium-rare), about 30 minutes.
  7. Transfer the tenderloin roast to a cutting board. Loosely cover with foil and allow to rest 20 minutes before slicing and serving.
