Gluten Free Chocolate Cupcakes

These gluten free chocolate cupcakes have a tender, fluffy crumb. They are very good even without the frosting, but the frosting elevates them into perfection. And since they are made with low-carb, high-fiber coconut flour, they are not as calorie-dense as most cupcakes, and they are very filling.

Ingredients
Cupcakes:
  • 1 teaspoon coconut oil for cupcake liners
  • 2 large eggs
  • ½ cup whole milk
  • ½ cup xylitol*
  • 1 tablespoon pure vanilla extract
  • ½ cup coconut flour
  • ¼ cup unsweetened cocoa powder
  • ⅛ teaspoon kosher salt
  • ½ teaspoon baking soda
Frosting:
  • 1 (8 oz) package neufchâtel cheese (or reduced-fat cream cheese), at room temperature
  • ¼ cup xylitol
  • 2 teaspoons vanilla extract
Instructions
  1. Preheat oven to 350 degrees F. Line 6 muffin cups with liners, and brush the liners with coconut oil.
  2. Place the remaining cupcake ingredients in food processor and process until smooth, 1-2 minutes, stopping once to scrape the sides with a rubber spatula.
  3. Using a 4-tablespoon ice cream scoop, transfer the batter to the prepared muffin cups.
  4. Bake 25 minutes, or until set and a toothpick inserted in center comes out clean. While cupcakes are baking, clean your food processor.
  5. Cool the cupcakes 15 minutes on a cooling rack.
  6. To make the frosting, place the frosting ingredients in food processor and process until very light and fluffy, about 2 minutes, stopping once or twice to scrape the sides with a rubber spatula.
Notes
*Here’s why I believe xylitol is safe. If you’re not convinced, replace with equal amounts of granulated sugar or coconut sugar. Honey might also work, especially in the frosting, but in the cupcakes, if you use honey, you might need to reduce the amount of milk.
