Paleo Oatmeal

Obviously, this Paleo oatmeal is not made with oats, but it has a very similar texture. It’s a tasty, comforting breakfast porridge you can feel good about eating, and while the real thing is still better (in my opinion), this comes very close.

Serves: 1 serving
Ingredients
  • 1 large egg
  • ½ cup unsweetened applesauce
  • ¼ teaspoon cinnamon
  • ¼ teaspoon vanilla extract
  • 1 tablespoon (7 grams) crushed pecans
  • 1 tablespoon unsalted butter, divided
  • ½ tablespoon maple syrup
Instructions
  1. In a medium bowl, beat the egg. Add the applesauce, cinnamon and vanilla, whisking to incorporate. Mix in the crushed pecans.
  2. In an 8-inch nonstick skillet, heat ½ tablespoon butter over medium heat until melted. Swirl to coat the skillet. Use a spatula to transfer the “oatmeal” mixture to the skillet. Cook, stirring often, about 5 minutes, until egg is cooked through.
  3. Transfer the oatmeal to a bowl. Top with the remaining butter and with maple syrup.
