Gluten Free Cheese Biscuits

These gluten-free cheese biscuits are low in carbs, but they are not low in flavor. Tender and cheesy, with a pleasant subtle kick from the cayenne, they’re great for breakfast, as a snack, or as a side to chili.

Ingredients
  • 1 cup (4 oz) almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon garlic powder
  • ¼ teaspoon salt
  • ⅛ teaspoon cayenne pepper
  • 1 cup (4 oz) shredded sharp cheddar cheese
  • 2 tablespoons melted unsalted butter
  • 1 large egg, lightly beaten
Instructions
  1. Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper.
  2. In a medium bowl, whisk together the almond flour, baking soda, garlic powder, salt and cayenne. with a spatula, fold in the cheese, then the butter and the egg, mixing well until the mixture comes together into dough.
  3. Use your hands to lightly knead the dough, just once or twice, then divide it into six equal parts, each weighing about 2 ounces. Shape each part into a ball, place on the prepared baking sheet and gently flatten with your hand, just a little, to form thick disks.
  4. Bake 20 minutes, until puffed and golden. Serve warm. Leftovers can be frozen and gently reheated in the microwave.
