Edamame Salad

I found this tasty edamame salad in the prepared foods section of a small local grocery store. It was simple and delicious, and I knew right away that would just have to recreate the flavors and make my own version. This edamame salad makes a great dish for entertaining, because you can make it a few hours in advance and allow it to marinate.

Ingredients
  • 1 (16 oz) bag frozen shelled edamame
  • ½ cup coarsely grated carrots (1/2 large carrot)
  • ¼ cup finely diced shallot
Dressing:
  • ¼ cup extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 teaspoons minced garlic
Instructions
  1. Bring 6 cups water to a boil. Add the frozen edamame. Bring back to a boil, cook 3 minutes, then drain into a colander and rinse with cold water to stop the cooking process.
  2. Meanwhile, grate your carrots, dice your shallots and whisk together the dressing ingredients in a small bowl.
  3. Transfer the cooked edamame to a salad bowl. Add the carrots and shallots. Pour the dressing on top, mixing well to combine. Cover with plastic wrap and refrigerate for at least 30 minutes before serving.
