I had some leftover dates from making bacon wrapped dates, and goat cheese from making warm eggplant sandwich. When searching the internet for ideas, lots of recipes popped up for “goat cheese stuffed dates,” so of course I was intrigued. The following is a combination of several recipes I found, plus an effort to reduce the amount of sugar and calories in the final result by using honey and nuts sparingly. Similarly to bacon-wrapped dates, this dish offers delightful contrasts in flavors (sweet, tangy) and textures (soft, crunchy).

Serving size: 6 dates
Makes 4 servings

Total time: 10 minutes

Ingredients
24 small pitted dates (6 per person, 160 grams total; if using large dates, use 4 per person)
4oz soft goat cheese, softened for just a few seconds in microwave (start with 10 seconds)
4 teaspoons honey
24 walnut pieces

Directions
Make a lengthwise slit in each date:

Use a small teaspoon to fill with cheese. Place a walnut piece on top, and lightly press. Drizzle with honey. Serve immediately, or refrigerate until ready to serve. Remove from fridge 30 minutes before serving to allow cheese to soften.
