Buttermilk Chicken

Buttermilk chicken is one of my favorite ways to prepare chicken drumsticks. Marinating the drumsticks in buttermilk, then liberally seasoning them and roasting in a hot oven produces extra juicy drumsticks with a crisp, flavorful skin.

Seasoning mix:
  • 2 teaspoons (packed) brown sugar
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 4 large chicken drumsticks, skin on (1 lb. total)
  • 1 cup low-fat buttermilk
  • Olive oil spray
  1. Mix the seasonings and place in an airtight container.
  2. Place the chicken drumsticks in a ziploc bag. Add the buttermilk. Place the bag in a pan to prevent any spills and marinate until ready to roast, at least 1 hour and up to 8 hours.
  3. Preheat oven to 425 degrees F. Line a roasting pan with foil and place a roasting rack in the pan. Spray the rack with olive oil spray.
  4. Arrange the chicken pieces on a platter, discarding the buttermilk (except for what's coating the drumsticks).
  5. Sprinkle the chicken pieces with the seasoning mix. Place on the roasting rack and lightly spray with olive oil spray.
  6. Roast 35-40 minutes, until deep brown, even charred in spots, and cooked through.
