Spicy Chickpeas

A very flavorful dish of chickpeas, sautéed in olive oil and seasoned with garlic, cumin and paprika. It’s an easy vegetarian (actually, vegan) main dish when served over brown rice with a side of vegetables, or an excellent side dish to beef and lamb. If you don’t like your food spicy, simply omit the cayenne – this dish is delicious without any heat.

  • 2 (15 oz) cans chickpeas
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon minced garlic
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon kosher salt
  • ⅛ teaspoon cayenne pepper
  1. Drain the chickpeas and rinse.
  2. Heat the olive oil over medium-high heat, about 3 minutes. Add the garlic and sauté 1 minute. Add the cumin, paprika salt and cayenne and cook, stirring, 30 seconds, until fragrant.
  3. Add the chickpeas. Cook, stirring constantly, 3-5 minutes, until well-coated and heated through.
