Crunchy, flavorful cauliflower gets its pleasant crunch from baking instead of frying.

Ingredients
Olive oil cooking spray
1 cauliflower head
2 large eggs, lightly beaten
2 (40-gram) slices whole-wheat bread, dry, torn into pieces
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried thyme
1/4 cup grated Parmesan

Directions
1. Preheat oven to 400 degrees F. Line a large baking sheet with foil and spray it with nonstick olive oil spray.

2. Wash the cauliflower, dry, and cut into florets.

3. In a medium bowl, whisk the eggs.

4. Process the bread pieces in the food processor until fine breadcrumbs are achieved. Add the spices and the cheese and process a few more seconds to incorporate. Place seasoned breadcrumbs in a bowl.

5. Dip each cauliflower floret in the eggs, then dip in the breadcrumbs, pressing to help breadcrumbs adhere. Place on prepared baking sheet.

6. Spray florets with olive oil spray. Bake 30 minutes, until golden brown.
