Taquitos, also called flautas, are a Mexican dish of small, rolled-up tortillas filled with chicken or beef. Traditionally, taquitos are fried until crisp, but in this recipe, they are baked. The amount of filling here can easily make 24 thin taquitos, but I like to use more filling and make 12 fat, hearty taquitos.

These baked taquitos crisp up beautifully when sprayed with cooking spray and baked in a hot oven. Dipping the hot, crisp taquitos in thick, creamy Greek yogurt rounds out the experience. Serve as an appetizer, or as a main dish, with a simple green salad.

Makes 6 servings

Olive oil spray
1 tablespoon olive oil
1 large onion, chopped
1 teaspoon kosher salt
1 tablespoon minced garlic
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon chili powder
1/4 cup prepared red salsa, hot or mild
1/2 cup plain nonfat Greek yogurt
1/2 cup chopped cilantro
2 cups cooked boneless skinless chicken breast, finely shredded (from 1 pound raw boneless skinless chicken breasts)
1 cup shredded sharp cheddar
12 (6-inch) corn tortillas

1. Preheat oven to 425°F. Line a large baking sheet with foil and spray it with nonstick spray.

2. Heat olive oil over medium heat in a large skillet. Add onion and salt cook until soft, stirring often, about 5 minutes. Add garlic, cumin and chili powder. Cook 1 more minute, stirring, until fragrant. Remove from heat and transfer to a large bowl. Stir in salsa, yogurt, cilantro, chicken and cheese.

3. Place tortillas, one at a time, on a microwave-safe plate. Cover with plastic wrap, and heat 15 seconds in the microwave to make the tortilla soft and pliable (otherwise it will break when you try to roll it up). Spread 1/4 cup of the filling over the entire tortilla surface, leaving a border. Roll up tightly and place, seam side down, on prepared baking sheet. Make sure the rolled tortillas are not touching each other – this will help them bake more evenly and become crisp all over. You might have some leftover filling – keep it in the fridge and use it to make quesadillas the next day.

4. Spray tortillas with olive oil spray. Bake 10 minutes. Remove from oven, spray again, rotate baking sheet and bake 10 more minutes, until crisp and golden brown. Serve immediately, with cold beer and condiments: salsa, guacamole and plain Greek yogurt.
