Rustic Apple Cake

Fragrant, hearty and wonderful, this apple cake fills the house with the most amazing smell as it bakes. Since it’s not too sweet, and very filling, I actually like to have it for breakfast.

Ingredients
Nonstick baking spray
2 granny smith apples, peeled, cored, and cubed
1 tablespoon lemon juice
3/4 cup packed brown sugar
2 cups white whole-wheat flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
4 large eggs
1 cup reduced-fat milk
1/3 cup olive oil
1 teaspoon pure vanilla extract

Directions
1. Preheat oven to 350 degrees F. Spray a 9 X 5 X 3-inches loaf pan with baking spray.

2. Place apple cubes in a large bowl. Add lemon juice and sugar and mix well. Set aside.

3. In a large bowl, whisk together flour, baking powder and salt. In a medium bowl, whisk together eggs, milk, oil and vanilla. Add liquid mixture to dry mixture, mixing just until combined. With a spatula, transfer the apple-sugar mixture to the bowl and fold in.

4. Transfer batter to prepared pan. Bake 1 hour, then check doneness by inserting a skewer in center of cake. If skewer comes out wet, loosely cover cake with foil and bake 10 more minutes, then check again. When cake is done, remove from oven. Cool in pan 30 minutes, then invert onto a plate. Cut into 10 slices and serve.
