Thick wedges of potatoes are coated with spicy cajun seasoning, then baked until crisp on the outside and tender on the inside. Microwaving the potatoes first helps speed up the process without giving up the crispiness that only an oven can provide.

  • 1 teaspoon kosher salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ⅛ teaspoon cayenne
  • 1 large (about 12 oz) Russet potato, unpeeled
  • Olive oil spray (make your own using a spray bottle)
  1. Preheat oven to 450 degrees F. In a small bowl, whisk together the cajun seasoning ingredients.
  2. Scrub the potato clean, then slice it into six thick wedges - first slice in half lengthwise, then slice each half into three long wedges. Dry the wedges with paper towels.
  3. Place the potato wedges on a microwave-safe plate and microwave them, uncovered, 5 minutes.
  4. Transfer the potatoes to a baking dish large enough to accommodate them in a single layer and sprayed with olive oil. Spray the potatoes with olive oil, then sprinkle them with the seasoning, coating them allover.
  5. Bake the potatoes for 10 minutes. Carefully turn each wedge to the other side, lightly spray again, and bake 10 more minutes, or until fork-tender.
