This easy, delicious mango parfait is super-refreshing. It reminds me of Indian mango ice cream – but it’s lower in calories and in fat.

Ingredients
1 *very* ripe (12oz whole) mango, cubed
2 tablespoons sugar
1/4 teaspoon pure vanilla extract
1/2 cup plain, low fat Greek yogurt (I like Voskos)
2 Egg whites

Directions
Process mango in food processor until smooth, about 30 seconds. Add the remaining ingredients. Process 10 more minutes, stopping once to scrape sides of bowl, until light and foamy. Pour into four individual serving dishes. Freeze for 2 hours, or until firm (but don’t freeze for too long or it will become hard and icy). Remove from freezer 5 minutes prior to serving.
