Sweet, fresh, in-season corn can absolutely be enjoyed raw. This raw corn salad is my favorite way to enjoy the fresh, crisp taste of raw corn.
Makes 2 servings

Total time: 10 minutes
Ingredients
2 cups fresh corn kernels cut from the cob (2 large ears)
1/4 cup chopped red onions
1/4 cup chopped cilantro
Dressing:
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 teaspoon honey
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
Directions
Place corn kernels, red onions and cilantro in a medium bowl. Whisk together dressing ingredients. Pour onto salad. Mix well and serve. This salad can be made 1-2 hours in advance – it actually gets better as the flavors meld together.
