Peaches are in season, and I am making the most of it! This delightful dessert of grilled peaches combines grilled, sweet, warm peaches with cold, creamy frozen yogurt. Although low in fat and not very high in calories (especially for a dessert), this dish is very high in sugar, so if this is a concern, consider omitting the honey. Use large, firm peaches for this recipe – in fact, it is perfect for those unfortunate, too-hard peaches. The soft, super juicy ones are better enjoyed raw.

4 large, firm peaches
2 tablespoons sweet butter, melted
2 tablespoons honey
2 cups nonfat vanilla frozen yogurt (I use Stonyfield)
1. Heat grill, or grill pan, on medium. Preheat oven to 400 degrees F. Cut peaches in half and remove the pit. Brush cut side with butter. Place, cut side down, on the grill. Grill about 5 minutes, or until lightly charred.
2. Place peaches on a baking dish, cut side up. Lightly spray with butter-flavored cooking spray. Place baking dish in oven and bake peaches, uncovered, 5-10 minutes (depending on how firm they were to begin with), until tender.
3. Place 2 peach halves and 1/4 cup frozen yogurt on each plate. Drizzle with honey. Serve immediately.
