mini frittatas

Mini frittatas are fun to make, fun to serve and fun to eat. They are wonderful when you entertain for brunch, but can also make a good, simple family dinner when served with a big, colorful salad.

Serving size: 1 mini frittata
Makes 4 servings

Ingredients
10 large eggs
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded Parmesan cheese
1 cup chopped scallions, green parts
Nonstick spray

Directions
1. Preheat oven to 400 degrees F. Place four 5-inch baking dishes on a large baking sheet. Place baking sheet in the oven.

2. Beat the eggs with the salt and pepper. Add the cheese and scallions. Mix well. Transfer the egg mixture to a measuring cup with a spout.

3. Carefully remove the baking sheet from the oven. Spray the hot baking dishes with nonstick spray. Pour the egg mixture into them, dividing it evenly.

4. Bake 20 minutes, until golden brown and puffy and a toothpick inserted in center of one of the frittatas comes out clean. Serve immediately.
