This tasty dish of rice and beans is ready fast, thanks to using pre-cooked rice and canned black beans. The seasoning is bold, nontraditional, and phenomenal.

Seasoning mix:
  • 1 teaspoon kosher salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander
Rice and beans:
  • 1 tablespoon olive oil
  • 3 cups cooked brown rice (yield of 1 cup dry brown rice)
  • 1 (15 oz) can unsalted black beans, drained and rinsed
  1. In a small bowl, use a fork to mix together the seasonings.
  2. In a large skillet, heat the olive oil over medium-high heat, about 3 minutes. Add the cooked rice, the black beans and the seasoning mix. Cook, stirring, until heated through and incorporated, 3-5 minutes.
