To make these baked corn flakes chicken nuggets, chicken breasts are cut into nuggets, coated with cornflakes, then baked until crisp. Cornflakes chicken makes a great alternative to fried chicken. With lots of flavor from the seasonings and lots of crunch from the corn flakes, you won’t miss the deep frying.

Ingredients
2 boneless, skinless chicken breast halves (1 pound total weight)
1 cup low fat buttermilk
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/8 teaspoon cayenne
4 cups cornflakes
Olive oil cooking spray

Directions
1. Cut chicken breasts into nuggets – whatever shape you get, it doesn’t really matter as long as they’re roughly the same size. Lightly pound nuggets with a meat pounder to make them just a bit thinner.

2. Place chicken nuggets in a large Ziploc bag. Pour the buttermilk inside. Close the bag, removing air, and squish to coat. Place in a shallow dish and refrigerate for 30 minutes.

3. Meanwhile, whisk together salt, pepper, garlic powder, onion powder, paprika and cayenne. Place cornflakes in a ziploc bag and crush using a rolling pin. Place in a shallow bowl.

4. Preheat oven to 450 degrees F. Line a large baking sheet with foil and spray it with cooking spray.

5. Remove chicken pieces from buttermilk, discarding buttermilk. Place on a large plate. Sprinkle with seasoning mix on both sides. Dredge each chicken nugget in crushed cornflakes, pressing to help flakes adhere. Transfer coated pieces to prepared baking sheet. Spray with olive oil cooking spray. Bake about 7 minutes on each side, spraying again with olive oil spray after turning, until nuggets are golden-brown and crisp and an instant read thermometer reaches 165 degrees F when inserted in the bigger pieces.
