fresh mushroom salad

Simple, fresh, delicious mushroom salad. Make sure you use very fresh, small, firm mushrooms.

Ingredients
2 (8oz) packages small, firm button mushrooms
Dressing:
1/4 cup extra virgin olive oil
1 tablespoon fresh lemon juice
1 teaspoon minced garlic
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup fresh chopped basil

Directions
1. Wipe mushrooms with a damp paper towel.

2. In a small bowl, whisk together olive oil, lemon juice, garlic, salt and pepper.

3. Pour dressing on mushrooms. Add the basil, mix and serve.
