huevos rancheros

Delicious and very filling, Huevos Rancheros is a favorite brunch recipe in our house when we’re in the mood for something savory. Recipe adapted from the “30 Minutes Best recipe” cookbook.

Makes 2 servings

Ingredients
2 (6-inch) corn tortillas
Olive oil spray
2 large eggs
1/8 teaspoon salt
1/8 teaspoon black pepper
1/4 cup canned fat-free refried beans
1/4 cup shredded sharp cheddar cheese
2 tablespoons chopped fresh cilantro
1/2 cup prepared salsa

Directions
1. Heat oven to 450 degrees F. Spray both sides of each tortilla with olive oil spray. Place tortillas on a baking sheets and bake 4 minutes on each side, until golden. Remove tortillas from oven and turn oven off.

2. Meanwhile, heat a 10-inch nonstick skillet over medium heat for 3 minutes. Spray with nonstick spray. Crack 2 eggs into the skillet. Season eggs with salt and pepper. Loosely cover with foil, and cook 3-5 minutes, depending on how done you want the yolks.

3. While the eggs cook, spread half of the refried beans on top of each tortilla and sprinkle with half of the cheddar. Return to the still-warm oven for 2-3 minutes to heat the beans and melt the cheese.

4. Remove tortillas from oven. Transfer to plates. Top each tortilla with a fried egg. Garnish with tablespoon of chopped cilantro. Serve immediately, with 1/4 cup salsa per person.
