Grownup, because the ingredients are grownup – multi grain bread, fresh mozzarella, olive oil and basil. The taste? Just as gooey and comforting as your childhood sandwich, but much more interesting and complex. To me, this actually tastes far better than a spongy-white-bread-with-butter-and-processed-cheese sandwich.
Makes 1 sandwich

Ingredients
1 tablespoon extra virgin olive oil
2 slices multi-grain bread
1/8 teaspoon black pepper
2 (1oz) slices fresh Mozzarella cheese
4 fresh basil leaves
Directions
1. Heat 1/2 tablespoon olive oil in a skillet or griddle over medium heat.
2. Meanwhile, assemble the sandwich: place mozzarella on top on one bread slice, add freshly ground black pepper, top with basil leaves and with the second slice of bread.
3. Fry the sandwich on one side until golden, 2-3 minutes, pressing on it with a spatula to flatten. Remove from skillet, add 1/2 more tablespoon olive oil and fry on the other side, 2 more minutes. Serve immediately.
