These chocolate pancakes are a real treat. They are airy and fluffy, with a pronounced chocolate flavor. I simply dust them with powdered sugar and serve – no need for maple syrup or butter – they are very rich and satisfying on their own.

1 cup all-purpose flour
1 cup whole-wheat flour
1/2 cup unsweetened cocoa powder
1/2 cup sugar
1/2 teaspoon salt
1 1/2 tablespoons fresh baking powder
2 large eggs, lightly beaten
2 cups reduced-fat milk
2 tablespoons vegetable oil
1 teaspoon pure vanilla extract
1 tablespoon powdered sugar

1. Whisk together flours, cocoa powder, sugar, salt and baking powder in a large bowl.

2. In a medium bowl, whisk together the eggs, milk, oil and vanilla.

3. Slowly pour liquid mixture over dry mixture, mixing with a spatula to combine. Don’t over mix – batter should remain lumpy.

4. Heat a griddle over medium heat, about 4 minutes. Spray with nonstick spray. Pour pancakes onto griddle, measuring a scant 1/4 measuring cup per pancake. Cook 2-3 minutes on each side, until puffed and cooked through. Dust with powdered sugar and serve.
