Chocolate Pancakes

These chocolate pancakes are a real treat. They are airy and fluffy, with a deep chocolate flavor. I simply dust them with powdered sugar and serve – no need for maple syrup or butter, as they are very rich.

Ingredients
  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • ½ cup unsweetened cocoa powder
  • ½ cup sugar
  • ½ teaspoon salt
  • 1½ tablespoons fresh baking powder
  • 2 large eggs, lightly beaten
  • 2 cups reduced-fat milk
  • 2 tablespoons light olive oil
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon unsalted butter for griddle
  • 1 tablespoon powdered sugar
Instructions
  1. Whisk together the flours, cocoa powder, sugar, salt and baking powder in a large bowl.
  2. In a medium bowl, whisk together the eggs, milk, oil and vanilla.
  3. Slowly pour the liquid mixture over the dry mixture, mixing with a spatula to combine. Don't over mix - batter should remain lumpy.
  4. Heat a griddle over medium heat, about 4 minutes. Brush with a thin coat of butter. Pour the pancakes onto the griddle, measuring a scant ¼ measuring cup per pancake.
  5. Cook the pancakes 3 minutes on each side, or until puffed and cooked through. Dust with powdered sugar and serve.
