Crustless Mini Spinach Quiches

mini spinach quiches

No need for a crust – these mini quiches are just perfect, and without the crust, you’re getting all the flavor without unnecessary calories.

Makes 12 mini quiches

Ingredients
2 (10-ounce) packages frozen chopped spinach
4 large eggs
2 cups low-fat Greek yogurt (I use Voskos)
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon black pepper
1 1/2 cups shredded part-skim mozzarella
1/4 cup white whole-wheat flour
1/2 cup sharp cheddar cheese, shredded

Directions
1. Preheat oven to 350 degrees F. Spray 12 silicone muffin cups with nonstick spray. Place the silicone muffin pan on a baking sheet.

2. Cook spinach in 1/4 cup water, just until thawed. Drain well.

3. In a large bowl, whisk eggs with yogurt and spices. Stir in the Mozzarella, then the spinach, and finally the flour. Pour the mixture into prepared cups. Sprinkle cheddar on top.

4. Bake until set and slightly puffed and a toothpick inserted in center comes out clean, 30-35 minutes.
