One of my favorite lunches, turkey wraps are incredibly versatile. We like to keep them very simple – homemade whole wheat tortillas, hummus and turkey, serving the veggies or a salad on the side, but you can certainly add veggies (lettuce, tomato, cucumber, red onion) to the wrap, add a slice of cheese, and/or use a different spread, such as mayonnaise, cream cheese or guacamole.
Makes 1 serving
Total time: 10 minutes
2 homemade whole wheat tortillas (or use store-bought)
2 tablespoons hummus
4 thin slices deli turkey breast – 2 ounces total (I use Applegate Farms sliced turkey)
1. Warm the tortillas a few minutes in a hot skillet until soft and pliable.
2. With a spatula, spread each tortilla with hummus, leaving a 1-inch border.
3. Place two turkey slices in the center.
4. Roll tightly into a log. With a sharp knife, cut in the middle, on the diagonal. Serve immediately.
