Chana Masala

This easy chana masala recipe is ready in 30 minutes. A popular Indian dish, chana masala is a savory, flavorful stew of chickpeas and onions, flavored with a long list of spices. To make things easier, I use canned chickpeas, and a chana masala spice mix.

Ingredients
  • 2 teaspoons chana masala spice mix
  • ¼ teaspoon garam masala
  • 1 teaspoon kosher salt
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger root
  • 2 (15 oz) cans garbanzo beans, drained and rinsed
  • 1 cup water
  • 2 tablespoons chopped parsley for garnish
Instructions
  1. In a small bowl, mix together the chana masala mix, garam masala and kosher salt. Set aside.
  2. Heat the olive oil over medium-high heat, about 3 minutes. Add the onion and cook until soft and beginning to brown, 4-5 minutes.
  3. Add the garlic and ginger and cook, stirring, 1 more minute.
  4. Add the spices. Cook for 30 seconds, until fragrant.
  5. Add the chickpeas and stir to coat in the spices.
  6. Add the water. Stir to combine. Bring to a boil. Reduce heat to medium-low, cover, and simmer 20 minutes, until liquid reduces by half and chickpeas are soft.
