This multi-grain French toast is golden and crisp on the outside, tender and chewy on the inside.
Makes 4 servings

Ingredients
2 large eggs
1/2 cup lowfat Greek yogurt (I use Voskos)
2 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
1/8 teaspoon salt
1/4 teaspoon ground cinnamon
8 slices multigrain or whole wheat bread
Nonstick butter-flavored spray for coating skillets
Topping: 1 tablespoon powdered sugar
Directions
1. Heat oven to 200F. Heat two large, 12-inch skillets or a griddle over medium heat for 5 minutes.
2. Meanwhile, beat together all the ingredients except for the nonstick spray and the powdered sugar in a (9 X 13) Pyrex dish, until well-blended.
3. Spray skillets with nonstick spray. Dip both sides of each bread slice in egg mixture and transfer to hot skillet. Cook until golden brown, about 2 minutes for each side. Keep cooked slices on a wire rack in preheated oven while remaining slices cook.
4. Dust with powdered sugar and serve with warm maple syrup.
