I love sourdough bread, and I especially love it as French toast. The tanginess of the bread is complemented by the sweetness of the maple syrup. Delicious! Plus, sourdough bread is good for you – even more so than whole wheat bread, according to some studies.

Makes 4 servings

Prep: 10 minutes
Cook: 15 minutes

1 large egg
1/2 cup whole milk
1 teaspoon pure vanilla extract
1/4 teaspoon ground cinnamon
4 slices sourdough bread, dry
1 tablespoon unsalted butter
4 tablespoons warm maple syrup

1. Heat two large, 12-inch skillets or a griddle over medium heat for 5 minutes.

2. Meanwhile, beat together the egg, milk, vanilla and cinnamon in a (9 X 13) Pyrex dish, until well-blended.

3. Dip both sides of each bread slice in the egg mixture until well-soaked but not falling apart, about 1 minutes per side. Place the butter on the hot griddle and brush to coat. Transfer the soaked bread slices to the hot griddle. Cook until golden brown, about 3-4 minutes per side. Serve immediately, with warm maple syrup.
