As I was debating out loud what to make next with our leftover roasted turkey breast, everyone shouted “Pizza!” – so this is what I made. It’s a delicious pizza any day of the year, and needless to say, you can make it with baked chicken breast too.

Makes 2 pizzas

Total time: 2 hours 35 minutes
Prep: 10 minutes
Inactive: 2 hours 15 minutes
Bake: 10 minutes

1 1/4 cup warm water
2 tablespoons extra virgin olive oil
1 1/2 cup whole wheat flour
1 1/2 cup all-purpose flour
3 tablespoons vital wheat gluten
1 tablespoon sugar
1 teaspoon salt
1 envelope rapid rise yeast
Olive oil cooking spray

Topping (divided between the two pizzas):
2 tablespoons extra virgin olive oil
2 teaspoons kosher salt
2 teaspoons minced garlic
2 cups (8oz total) cooked turkey or chicken breast, meat only, cubed
1/4 cup (1oz) freshly grated Parmesan cheese
1/4 cup fresh parsley, finely chopped

1. In the bread pan of an electric bread machine, combine the warm water, olive oil, flours, sugar, salt, and yeast. Set the machine for the dough cycle. Check the dough after 5 minutes or so to make sure it’s smooth and elastic and moves freely in the bread machine pan. Add a little flour if it’s too wet, a little warm water if it’s too dry.

2. When ready, transfer the dough to a lightly floured work surface. Punch it down and divide into two balls. Place dough balls on a lightly greased baking sheet, lightly spray them with olive oil spray, cover with a clean kitchen towel and allow to rise in a warm place until doubled in size, about 45 minutes.

3. Preheat oven to 500 degrees F and spray two 14-inch pizza pans with olive oil spray.

4. Roll out each dough ball on a lightly floured counter, then transfer to the pan and use your fingers to gently stretch out the dough to cover the entire pan.

5. Brush dough with olive oil. Sprinkle dough with kosher salt and garlic. Scatter the turkey cubes on top and sprinkle with mozzarella, Parmesan and finally parsley. Bake 8 minutes, until dough is golden and puffed and cheese is melted.
