Whole-Wheat Coconut Muffins

Sweet, chewy, very coconuty coconut muffins. If you love coconut, you will love these.

Makes 24 muffins

Cook: 20 minutes
Rest: 15 minutes

2 cups whole-wheat flour
2 teaspoons baking powder
1 (8oz) bag unsweetened coconut flakes
1/2 cup coconut oil, melted
1 cup sugar
5 eggs
1 cup whole milk
1 teaspoon coconut extract

1. Preheat oven to 350 degrees F. Line 24 muffin cups with paper liners and spray with nonstick spray.

2. Mix together flour, baking powder, sugar and coconut flakes.

3. In a separate bowl, beat the eggs with the coconut extract. Add the milk and the oil. Mix well.

4. Add flour mixture to egg mixture and mix until incorporated.

5. Fill each muffin cup 3/4 full. Bake 20 minutes, or until a toothpick inserted in center comes out clean. Cool 5 minutes in pan on a wire rack, then 10 more minutes on a wire rack.
