Applesauce Muffins

These sweet, moist and tender applesauce muffins make a wonderful breakfast!

Ingredients
  • Olive oil spray
  • 1 cups all purpose flour
  • 2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • ½ cup sugar
  • ¼ cup light olive oil
  • 2 cups unsweetened applesauce
Topping:
  • ¼ cup sugar
  • 1 teaspoon ground cinnamon
Instructions
  1. Preheat oven to 350 degrees F. Line 18 muffin cups with liners and spray the liners with olive oil spray.
  2. In a large bowl, whisk together the flours, baking powder and cinnamon.
  3. In another bowl, using a hand whisk or an electric whisk, beat together the eggs and sugar. Add the oil, then the applesauce.
  4. Pour the liquid ingredients over the dry ingredients and mix just until combined. Don't over mix.
  5. Spoon the batter into the prepared muffin cups. Mix the topping ingredients and sprinkle on top.
  6. Bake 20 minutes, or until a toothpick inserted in center comes out clean. Cool 5 minutes in pan, then 10 minutes on a cooling rack.
