These applesauce muffins are moist and sweet – but not too sweet. We love having them for breakfast.
Makes 18 muffins

Ingredients
1 cups all purpose flour
2 cups whole wheat flour
1 TBS baking powder
1 tsp cinnamon
2 eggs
1/2 cup sugar
1/4 cup olive oil
2 cups unsweetened applesauce
Cinnamon sugar for topping:
1/4 cup sugar
1 teaspoon cinnamon
Directions
1. Preheat oven to 350n degrees F. Line 18 muffin cups with liners and spray with nonstick spray.
2. Mix flours, baking powder and cinnamon in a large bowl.
3. Using a hand whisk or an electric whisk, cream together sugar and eggs. Add oil, then applesauce.
4. Pour liquid ingredients over dry ingredients and mix just until combined. Don’t over mix.
5. Spoon batter into prepared muffin cups. Sprinkle cinnamon sugar on top. Bake 20 minutes, or until a toothpick inserted in center comes out clean. Cool 5 minutes in pan, then 10 minutes on a cooling rack.
