Roasted Vegetables

Roasted veggies are easy and delicious. Simply brush the veggies with olive oil, sprinkle with seasonings and roast until tender.

  • Olive oil spray
  • 1 large orange fleshed sweet potato, washed and sliced lengthwise into long, thick wedges
  • 2 cups Brussels sprouts, washed and halved
  • 1 medium onion, peeled and sliced into rings
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  1. Preheat oven to 400 degrees F. Line a large baking sheet with foil and spray it with olive oil spray.
  2. Arrange the veggies in a single layer on the prepared baking sheet.
  3. Brush the veggies with olive oil using a pastry brush. Sprinkle with the spices. Bake 30 minutes, until tender and lightly browned.
